What is L. reuteri yogurt?

Lactobacillus reuteri is a probiotic strain popularised by Dr. William Davis’s Super Gut. The recipe that went viral takes a high dose of L. reuteri and ferments milk for roughly 36 hours — far longer than ordinary yogurt — to grow a very high count of live cultures.

That long, low-temperature ferment is exactly what’s hard to do at home: a degree too warm or a starter that’s off, and the batch separates, turns grainy, or simply doesn’t set. L. reuteri itself has been studied in connection with the gut–brain axis, calm mood, and oral and skin health — which is why people keep trying.
